Oxidation is an important part of the tea manufacturing process. Broadly speaking, white and green teas are least oxidized, oolong teas are semi oxidized and black teas are most oxidized. White teas have been savoured for ages in the courts of royalty for their subtle honeyed flavour and anti-aging properties. White teas are light, velvety and rich in catechins and polyphenols.
