  • The discovery of green tea was accidental:

According to legend, almost 5,000 years ago,  Chinese emperor Shen Nung, who was also a herbalist, was travelling and while he was resting outdoors, a few tea leaves fell into the pot of boiling water. The colour of the water changed and when the emperor took a sip of the water he was instantly enchanted by its delicate flavour and refreshing effect. Henceforth, he asked his soldiers to prepare the beverage by adding leaves.  

  • Green tea undergoes very little processing 

Green tea is one of the least processed teas that is available, as the leaves do not undergo much of the oxidation process. Typically, after leaves are plucked, they are allowed to wither for a few hours. Once they dry, they are rolled. In some cases, they are steamed or heated in pans to remove moisture and then packed. Some popular Chinese, Taiwanese and Japanese green tea varieties are pan-fired or roasted so they have an earthy flavour. 

  • The taste of green tea varies from region to region 

Though all forms of tea, be it green tea, oolong tea, or black tea originate from the same plant, they all have different appearance, aroma, and flavour characteristics. This can be attributed not just to processing but also weather, altitude, season and soil. For instance, green tea that comes from Darjeeling is different from Nilgiris. Darjeeling green tea has musky-sweet tasting notes whereas Nilgiri tea has fruity and floral flavours. 

  • Green tea isn’t always green in colour

Though called green tea, many varieties of green tea when brewed, appear light green, pale yellow or light brown. The variety of green tea leaves and the levels of oxidation determine the colour of the brewed product. Green tea leaves are not oxidised after rolling, and therefore they have a lighter colour when they are brewed. However, using water boiled at high temperatures to brew your tea will give you a more yellow looking tea.
